Walnut & Coffee Love Bites

We don’t really celebrate Valentines Day as such, but it’s indeed a good excuse to go out or cook something special. I really wanted to post a recipe which would be EASY, QUICK, DELICIOUS and suitable as a Valentines Day GIFT. As edible gifts, made by hand and straight from the heart are the best!

I’ve made before many versions of these bites/energy balls, with various nuts, hemp hearts, chia seeds or coconut flakes. This recipe, however includes two of my favourite ingredients – walnuts and coffee. I truly love the taste of walnuts and can eat the at any time of the day – try our Sweet Potato Salad with Walnut Salsa or Goat Cheese Toast with Walnuts, Honey, Thyme & Pomegranate. Walnuts are not only good for our brain and heart health, but also are a great source of healthy fats, vitamins, minerals and rich in antioxidants (source). Coffee – yes, I do drink coffee and I love a smell of freshly brewed coffee in the morning. I drink 1 – 2 cups daily and like with everything we eat or drink I believe there need to be a balance. There is a lot of articles with cons/pros of drinking coffee, but I think it’s important to learn to listen to your body. If you are not keen on coffee – replace it in this recipe with some extra raw cacao powder for an ultimate chocolaty flavour.

For the coating I used goji berries powder for a Valentines Day twist, but goji berries are one of the superfoods, very useful ingredient in the kitchen especially in the winter when it’s harder to get fresh berries. They have many health benefits and are packed with nutrients and antioxidants (source). I like to use them in salads, desserts or as a sweetener in smoothies and other drinks – try our Turmeric-Ginger Drink recipe.

These bites (balls) are very versatile – you can replace dates with apricots, nuts with other nuts or seeds, add extra spices and instead of goji berries powder roll them in raw cacao, coconut flakes, crushed nuts, citrus zest or just omit this step – they will be still delicious. Over the last three weeks I’ve been testing this recipe and need to say that they make a great snack for out of town trip, an indulgent treat for the lunch box or… a perfect edible Valentine’s gift…

Walnut & Coffee Love Bites

These Walnut & Coffee Love Bites make a perfect healthy edible present or treat. Super quick and easy to prepare. They are naturally sweetened and loaded with nutrients and healthy fats. Throw all ingredients into a food processor, add some love to prepare these goodness bites within minutes.


  • 2 cups walnuts
  • 6 dates, pitted
  • 1 tbsp maple syrup
  • 0,5 tbsp coconut oil
  • 1 tbsp raw cacao powder
  • 1 tbsp ground coffee
  • 1 tsp cinnamon
  • 1 tsp vanilla essence (optional)
  • pinch of salt
  • 6 tbsp goji berries powder



Place all ingredients in the food processor and turn on high. Process until you get a paste-like sticky consistency.


Transfer mixture to the ball and using your hand form tiny balls. You can measure roughly 1 tbsp per ball.


Place balls in the freezer for about 40min.


Take out from the freezer and roll each ball in a goji berries powder.


Store in the fridge for up to 1 week.


COFFEE-FREE VERSION - replace coffee with an additional 1 tbsp of raw cacao / NUT-FREE VERSION - replace walnuts with toasted sunflower or sesame seeds
