Waldorf Salad with Cheddar

Another crunchy salad from our series ‘Lunch in a Box’, prepared in under 10 minutes (to be very precise it took me around 8 minutes) and the cost is only CA$ 5! I called it Waldorf salad, however our version has few swaps and adds on. Original Waldorf salad is made of apples, celery, grapes, walnuts and dressed in mayonnaise. We swapped walnuts for sunflower seed, which makes it nut free, and instead of grapes used olives (personally I think apple makes the salad sweet enough). I also added cucumber for extra boost of green veggies and cheddar cheese to make it fully satisfying lunch option, without a need for reaching for snacks later on. Instead of mayonnaise I used a very simple dressing of lemon juice, apple cider vinegar and extra virgin olive oil. Sometimes instead of mayonnaise I use a mix of natural yogurt with a little bit of olive oil.  However this lunch box needed to travel to work today and we are having a heat wave here in Toronto, so olive oil + acv + lemon juice worked better. Also, it is always a good habit to squeeze some lemon juice (or lime, or orange juice) on fruits like: apple, pear, avocado, which will help keep them from browning.

I forgot to mention in a previous post, that you can prepare this salad in a big bowl, mix it and then transfer to the lunch box. However, I found it faster and easier to layer it straight in the lunch box. My journey to work (weather on bike or public transport) usually gives it enough shakes, without a need to mix the salad beforehand.

Waldorf Salad with Cheddar

Ingredients

  • 2 handfuls green salad leaves
  • 1 small cucumber (approx. 90g), sliced
  • 1 celery stalk, sliced
  • 1/2 small or 1/4 big apple, sliced
  • 1/2 lemon
  • 10 black olives, pitted
  • 30g cheddar, cut into cubes (or other vegetarian hard cheese)
  • 1tbsp sunflower seeds, lightly toasted
  • 2 tsp extra virgin olive oil
  • 1 tsp apple cider vinegar
  • freshly ground pepper to taste

Instructions

In your lunch box layer salad leaves, cucumber, celery and apple.

Squeeze a bit of lemon juice on apple slices.

Add olives, cheddar cubes and sprinkle with sunflower seed. (If you super organize toast sunflower seeds ahead of time and keep them in a jar in the fridge. Alternatively, quickly toast them in a pan before before you start layering the salad, just keep and on them and mix from time to time, so they don't get burn).

In a small bowl or glass mix olive oil, apple cider vinegar and squeeze the rest of the lemon. Add a pinch of black pepper and pour it over salad, whic his ready to 'go';) Enjoy!

Notes

Diary-free option - replace cheddar with 1 boiled egg. Vegan option - replace cheddar with 1/2 avocado.
