Lemon Goat Cheese Cream

I’ve made this cream last week for the breakfast and it has been a hit in our kitchen since then. It does taste like a lemon cheesecake, without making the cake! I love to eat a toast with goat cheese and honey for breakfast, but this cream takes it to the next level! You can prepare it within minutes in the morning. Adjust the amount of yoghurt depending if you like to achieve a cream cheese or more sauce consistency. It also stores well in the fridge for up to 5 days. If you feel like experimenting try to add some nuts – pistachios or walnuts, dry apricots or orange zest instead of lemon.

Try to spread on the sourdough toasts and topped with fresh strawberries, maple syrup, dark chocolate shavings and hemp seeds! This cream is so delicious. It makes a great addition to toasts, pancakes or waffles. It's very light and has a sweet-lemony flavour. Very easy and takes only few minutes to prepare.

Ingredients

  • 200g organic soft goat cheese
  • 100g natural yoghurt
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/2 lemon, zest
  • pinch of salt

Instructions

Place all ingredients in a food processor and blend until smooth and creamy. Store in the fridge for up to 5 days.
