End of Summer Salad with Feta & Blueberries

This is another great salad, very quick and easy to prepare. It makes a light and refreshing lunch, but also would be perfect for (end of) summer parties and picnics. Fresh sweet blueberries pair here beautifully with salty and tangy taste of creamy feta. We topped it with roasted pumpkin seeds and added cucumber, red pepper and apple, which give a wonderful combination of crunchy textures.

  • 2 handfuls arugula (rocket)
  • 1/4 cucumber (approx. 90g), sliced
  • 1/4 red pepper (approx 90g), sliced
  • 1/4 big apple or 1/2 small, sliced
  • 1 handful seed sprouts (Optional - we used radish sprouts)
  • 1 big handful of blueberries (approx. 60g)
  • 25g feta cheese
  • 2 tbsp pumpkin seeds, roasted
  • 1/2 lemon
  • 2 tbsp extra virgin olive oil
  • black pepper, freshly ground



In your lunch box layer arugula, cucumber, red pepper and apple.


Squeeze some lemon juice on slices of apple.


Add sprouts, feta, blueberries and topped with pumpkin seeds. ( To save time roast the pumpkin seeds a night or few days before and keep them in the fridge in a jar).


Drizzle salad with olive oil and add some freshly ground pepper to taste.


VEGAN OPTION - replace feta with chickpeas (75g) or 1/2 avocado. VARIATIONS - swap feta for goat’s cheese / swap pumpkin seeds for walnuts.

Waldorf Salad with Cheddar

Another crunchy salad from our series ‘Lunch in a Box’, prepared in under 10 minutes (to be very precise it took me around 8 minutes) and the cost is only CA$ 5! I called it Waldorf salad, however our version has few swaps and adds on. Original Waldorf salad is made of apples, celery, grapes, walnuts and dressed in mayonnaise. We swapped walnuts for sunflower seed, which makes it nut free, and instead of grapes used olives (personally I think apple makes the salad sweet enough). I also added cucumber for extra boost of green veggies and cheddar cheese to make it fully satisfying lunch option, without a need for reaching for snacks later on. Continue Reading…

Salad for Nick

For few years now, most of the days I’ve been eating salads for lunch. For me salads are the most satisfying and refreshing option. Especially, if you are stack for a whole day in the office (or home) in front of the computer screen. It’s easy to fall in a trap of constant snacking and eating, but not feeling satisfied. Before I did a sugar detox and learned how to control sugar level in my blood, I snacked a lot. I would sit in front of the computer and for an hour ‘fight in my head’ about going and getting another biscuit. Or choose to have a ‘healthy’ snack, but then eat more then half a packet of rice cakes at one go… and still feel hungry. Continue Reading…
